I've dined at all the restaurants I listed and I WAS seated at my reservation time. I saw others come and go at various times, so it was not essentially a two-seating experience. Two of those restaurants are Michelin-starred... In order to gauge your definition of "well managed", would you please let us know the restaurants you've dined at that had the 2 seating scheme. That means the restaurant was well managed - and the only way they can seat patrons with reservations is by knowing what the average dining time is and by not over-booking, while having one or more reserve tables to allow for diners who take an extraordinarily long time. To the extent the reserve tables are not required, they can be given to walk-ins. No, the entire restaurant does not turn over simultaneously, but you can be sure that individual tables are booked for either two seatings (if the restaurant serves from 6:00 to 10:00) or three if they serve until midnight.
