The significant factor in scheduling formal nights isn't the day it's preceding, it's the day itself. Formal nights are unlikely to be on port days and more likely to be sea days.

Never the first or last night. Of the 5 days remaining they will usually be on a sea day if the itinerary allows it. However, sometimes they are on port days. When you board there will be a Princess Patter in your cabin and it will mention which nights are the formal nights.

Most of the time a formal night will be on a sea day. That way people are not rushing back for port to get cleaned up. Also allows people to make appointments for hair dresser.
