I'd just prefer if things in the MDR stayed a little more toward the upscale side.

The cruiseline is the one that decided the MDR wasn't going to remain upscale.

No more white glove service

No more roaming dinner musicians

No more ice carvings at the entrance

No more gala midnight buffets

Food portions shrunken and food quality has declined

No more intermezzo courses

No more chimes for dinner time

No more real lobster dinner on formal evenings

No more desert carts

No more parade of Baked Alaska (yes, I know, can't have open flames now)

No more souvenir formal night menus as keepsakes.

These were all things that made the MDR more special and upscale.

They were eliminated to lower costs and make the MDR more "pedestrian" and less "egalitarian" in my opinion, and to create a differentiation for specialty dining (which when it started WAS about providing more upscale food, service, and atmosphere, but it too has morphed from that, slightly, into just being about more abundant options and not all are about upscale atmosphere; some are, but not all).
