JimandStan Posted September 10, 2016 #1 Share Posted September 10, 2016 Caesar Oceania 1. 2 garlic cloves, minced + 1 to Season the Bowl 2. 1 teaspoon anchovy paste 3. 2 tablespoons lemon juice 4. 1 teaspoon Dijon mustard 5. 1 teaspoon Worcestershire sauce 6. 1 cup mayonnaise 7. 1/2 cup freshly grated Parmesan 8. 1/4 teaspoon salt 9. 1/4 teaspoon black pepper 10 Croutons & or extra Parmesan Cheese, to taste. Season a large Salad bowl with a clove of garlic, then discard the used clove. Chop or tear 2 heads of romaine lettuce into bite sized (no bigger than 1 inch square) pieces, and place into the bowl. Add enough dressing to coat the salad to your liking. Add croutons and/or extra Parmesan and toss the salad again. Serve well chilled. Link to comment Share on other sites More sharing options...

Arlene Original Caesar Salad 1 romaine pulled apart - 1-2" pieces ½ cup olive oil containing a crushed clove of garlic salt and ground pepper to taste 2/3 cup parmesan cheese 3 tablespoons lemon juice yolk of one raw egg or a yolk of coddled egg (boil for 1 minute) croutons anchovies Add olive oil with garlic and lemon juice to romaine and toss. Add egg yolk and toss again. Season with sale and pepper. Add parmesan chese. Taste and adjust oil, cheese, etc. Add croutons and anchovies if desired ( or serve anchovies separately) Link to comment Share on other sites More sharing options...

A coddled egg is added to the anchovy, garlic and Dijon then emulsified with vegetable oil per chef Caesar Cardini original recipe. It has only been recently where olive oil has been used.
