The Cruise Compass does not seem to list all of the bar hours individually. However, some are listed as opening at 11:00 or 11:15 am, including Sabor, Vintages, Bionic Bar, and Rising Tide. You shouldn't have trouble finding one at 1:00 pm.

Pool Bar is usually open upon boarding too.

We grab drinks after lunch and have never had a problem finding an open bar up on deck. The bar crew goes around w/ beer carts, sail-a-way cocktail, and others take orders.

We were on the ship before 11 am on harmony. i think we got up to the pool deck and bars were already open. If not, they were for sure open by 11

The absolute best bar on the ship, the rising tide bar will be.

They will have the majority of bars up and running...no worries. They will NOT miss out on a booze sale! By the time it nears sail-away, ALL bars (except maybe the casino bar) will be functioning at max speed!
