There are 32 creme brulee recipes, including some wild-sounding ones like white pepper creme brulee with fig and prune compote and chocolate-ancho creme brulee. Also, you can broil the sugar, but I prefer a torch. If you are planning to buy a torch, just go to a home improvement store and buy one at a fraction of the cost compared to a special chefs torch.
