Special occasions would be akin to Elegant night and on those nights they have table cloths.

 

For me every dinner on a ship should be a special occasion which is why I never eat dinner on the Lido deck But I know I am in the minority so while I miss the tablecloths my dinners will still be special

With most passengers refusing to get dressed appropriately for dining, things have become more and more casual.  So The America’s table was started on Carnival.  Menu is different,,and I like it.  Yes it saves money to not have a table cloth every night,  but then it gives everyone a more formal feel on elegant nights.  Table clothes and a different menu for elegant evenings is a nice touch.
