Disembarking Miami: Symphony of the Seas

Based on people’s experience with Harmony of the Seas, is it possible to make a 12:00 flight at MIA if we keep our luggage and disembark as soon as we can? We would have a car waiting, but it will be the Sat after Thanksgiving.

You don't have to get off with your luggage to make noon flight

The timing is not quite the same as Harmony as the ride to MIA from the new terminal is longer (than from PE to FLL), though not markedly so. You have plenty of time to make a noon flight.
