First timer whit NCL. Is it possible to bring coctails, wine, beer from any bar to the stateroom?

We've done it. As a matter of fact, we had our fridge emptied and brought up a few Coors Lights to put in it to enjoy on the Balcony.

Yes you can.  Plus you can even order 2 drinks at a time from the bars

Did they insist that you have them opened or could you take the capped bottles?

I've successfully asked for one to be opened and one to be saved for later.  On other ships that go to the Caribbean, specifically, Harvest Cay, where the drinks are not included with the package, I have been successful with ordering 2 beers unopened.  DH also ordered 2 unopened beers.  We then took the 4 beers and put them in a portable cooler with some ice and had our drinks for the island.  And yes, a tip helps.
