i can’t imagine how people that have NEVER  cruised NCL before navigate those stuff and I have had many sailings

Teppanyaki and Moderno are not ala carte due to the fact they are all-inclusive (food) for one price thus the 0.....  whereas Cagney's, Le Bistro etc have the ability to itemize selections but are covered by the SDP (one entree, unlimited apps, sides, desserts)... they made these ala carte so people can dine with others who are not on the SDP. 

 

It is a little confusing but can easily be cleared up by asking your TA, PCC, or even coming here like you did.
