travel from Southampton cruise port to amsterdam

Usually disembarkation is from about 7am unassisted, or the first tranche of regular disembarkation is from 7.30.

Southampton central station is a five-minute taxi ride, or a 20 minute walk from Celebrity's usual berth at City Cruise Terminal. There's normally no line for taxis for those disembarking unassisted, but lines can build as the morning progresses. With luggage ask the driver to drop you at the London-bound side of the station, and your platform is right by the station entrance. 

Train to London Waterloo takes about 90 minutes.

From London Waterloo station you have to cross central London by tube or by taxi to London St Pancras for Eurostar trains. I'll leave Londoners to suggest taxi or tube, but I reckon you should allow 40 minutes.

Registration for Eurostar is a minimum 45 minutes before departure time.

 

Especially at that time of day, a private transfer from Southampton would take longer than the train.

 

There are only a few Eurostar trains direct to Amsterdam, plus a few more which involve a change at Brussels.

And the timings aren't ideal.

With unassisted disembarkation, on current timetables you could catch the direct 07.30 or 07.37 or 08.00 trains (but no later trains) to Waterloo, then the 11.04 direct Eurostar to Amsterdam. But the leaves you little wiggle-time for delays at either the Southampton or the London end.

If you choose the 11.04 Eurostar I suggest you don't buy the cheap advance tickets for the Southampton to Waterloo train. Those cheap tickets are available from about 8 - 10 week out, but they are only good for the train time that you book - you will regret paying to book the 07.30 train and missing it, and you may regret booking the 08.00 if you're at the station in time for an earlier one. So I suggest you bite the bullet & book the "anytime single" tickets  (about £48 pp). Or buy your tickets at the station (same price), though that might cost precious minutes.

 

A later Eurostar train would ease the stress, but it'd involve a change at Brussels because the next direct St Pancras to Amsterdam isn't 'til 5.16pm.

 

Don't delay booking Eurostar too long, because fares are fluid and tend to be super-expensive if booked late.

But not the same rush for tickets Southampton to London Waterloo because those fares are fixed, other than the cheapies for a specific train which I've advised against if you're aiming for the 11.04 Eurostar.

 

All the above presumes you are travelling on a monday thru saturday.

Different timetables & circumstances on a sunday.

Alternatively there are direct flights from Southampton to Amsterdam (flight time about one hour).

Unless you're really stuck on taking the train, direct flights from SOU/Southampton to AMS run multiple times/day.  SOU is a small airport, 7 miles from Southampton itself,  with it's own train station (Southampton Central -> Southampton Airport Parkway) - although you may as well just take a taxi 

 

And, you still get to ride the train from AMS/Schiphol to Amsterdam Centraal.
