No I haven't but I've done a port stop in PC...I would be concerned about the timing and travel.

We did an amazing excursion to the KSC (Kennedy Space Center)...just offering a suggestion.

Enjoy whatever you decide would work for you.

The only issue I see with this is the ~1-hour each way. It is definitely doable, but I would not think it is worth it. One accident on 528 and you can't make it back. I know it is not likely, but once on there are no exits to make a detour. You would have to hope it clears or can turn around to make a very long loop around to get back to PC. I also don't think Sea World is worth it for maybe 4 hours. It is a nice park and fun things to do, just not worth the short time and stress. I would just do a beach day or go to KSC. You could also try to book a boat or kayak for a manatee tour. They have airboat tours and you could even do a fishing trip.

I just think heading to Orlando for the theme parks is a very risky time sink for very little enjoyment. Assuming you get 6-7 hours, you are wasting 2 driving back and forth. By the time you park and enter, it is another 30 minutes. If you want to go on a ride like Manta, the wait could be 30+ minutes. If you go to see a show, it is about 10-15 minutes waiting, then 30 minutes or so for the show, and done. You get to do maybe 6-7 things then leave stressed. This does not even include the transportation side. If you rent a car, there will be a time loss getting it done.

Several years ago we did Universal during a port stop at PC - got off the ship early, picked up a rental car, spent the day at the park and then returned the car and rode the car rental shuttle to the port.  Yes it was a short day in the park (But Harry Potter...), but we had already done KSC etc. and it all worked out.

Only you know if the risk is worth it.  Keep a traffic app handy to check for road issues and leave yourself plenty of time - it can be done.
