Yes, your key card (Sail & Sign card, as Carnival calls them) are used to disembark/board the ship, for onboard purchases and as key for your room indeed.

Your Sign & sail card will be in the mailbox outside your cabin. If you are delayed getting to the cabin at embarkation, your boarding pass will get you through Muster Drill, buy your drinks and anything else you need before arriving at your cabin. keep your boarding pass handy until you can open your cabin door.
