Paying gratuities at time of the booking

• We are looking at booking an upcoming cruise and we are a bit under on using our FCC which expire at the end of the year. When booking can we add the gratuities to the booking to use the remaining balance of the FCC so we are not leaving money on the table as these dollars will expire 12/22. Thanks
