New to Edge and anytime dining

I am new to the edge class and Anytime dining and have a few questions. We are wait listed for early dining but wondering if anytime is better because we can book day by day. I was booking my first night dining on my March cruise and at the end of booking I had to except term that including a $10 fee per person if you did not cancel 24 hours in advance? If we decided not to book ahead is it easy to get in the restaurants in the evening or is there a long wait??

Protips:

- The MDR host (usually it's the assistant M'D) can see the wait times for any MDR so if there's a 30min wait at the MDR you're at, you ask them to check the wait times on the other.

 

- In one MDR you can order off the menus from the other MDRs
