It's called muscle memory.  Regardless of how much training a person has, you never know how they will react in an actual emergency, so you try to make the proper response be done reflexively, without conscious thought.

Yeah, how's that going to work out with a bunch of vacationers?  And, how much longer would that make the muster drill, with the attendant complaints.
