Specialty Restaurants

My guess is that it varies somewhat, thus just check in on occasion.  I do that anyway just to see if the excursions also have been loaded and made available for our sailing.   We have never had a problem with reservations and when we have decided to go to a Speciality restaurant, have been flexible and with that flexibility gotten in even when making a reservation onboard.   We have also changed reservations onboard and being flexible, able to make a change.

 

With the above being say, you are doing the right thing by checking early to make sure you make any reservations you want as early as you can.
