Martini question - no froth?

Hi, currently on Silhouette, and I asked for a Porn Star Martini (passion fruit vodka etc) at Martini Bar, hoping to get a nice froth layer on top, bar tender says that’s not available on any of their martinis, anyone know why or why if they have any kind of martinis with a nice froth on top please? Thanks 😊

I believe that requires egg whites and no, you won’t find that at any bar.

 

for one thing, the egg whites need to be raw, so they wouldn’t be allowed to be served on a ship.

 

another kind of frothy martini is made with espresso, and most of the bars don’t have espresso machines

They will definitely serve a cocktail with egg whites. The Strawberry Fields on the old World Class Bar menu had an egg white. I think a few of the Eden cocktails do also. You can also use aquafaba but I've never seen them use that on a ship. Or any cocktail that has a lot of pineapple juice just needs shaken harder and you'll get some foam. 

 

If you want an espresso martini my suggestion would be avoid the machine. They are horrible and tasted very metallic for some reason. Ask them to make a proper one for you and it's 10x better.

To make a foam on a cocktail you either need to shake a protien or infuse it with Nitrous oxide .Egg white is the easiest protien source but has a very limited self life. Pasionfruit puree and pineapple juice also contain enough protien to create a foam.

 

A pornstar martini doesn't usually have egg white but gets a slight foam from the puree if given a good dry shake befor the ice hake.

 

To be fair none of the on menu drinks at the martini bar would contain egg white, passionfruit puree, pineapple or use N2O foams so they wouldn't need it for their normal serves. Going off menu at any bar is down to the ingredients they have avaiable

 

Although the new menu at the World class bar does not contain any foam dinks the Spicy Mango tini made by them for Sushi on five has a Spicey Mango ginger foam which does have egg white. To make this you need an iSi type whipper which uses N2O to foam the egg whites. These they definately had at the WCB in July as the bartenders there where making experimental foams and the occasional off book cocktail with egg white.

 

They also had a very good frozen passion fruit puree they were using in a drink one of them was developing for the Diagio World Class competition (Celebritys Santos Mercedes Enriquez won this competition in 2015, and Alexandra Muresan got into the top six 2022)

(Virgin Voyages bartender Edgar Pacheco, from Cancun, Mexico, was crowned the Diageo World Class Cruise Bartender of the Year on May 31 during the final stage of the cruise competition in Diageo’s Miami office.

Pacheco competed against five other contenders from four cruise lines: Santos Mercedes (who won the title in 2015) and Alexandra Muresan from Celebrity Cruises; Patricio Salles from Princess; Gerlie Arbolente from Norwegian and Danny Judge, also from Virgin.)

The World Class's bar is really limited to a set menu and the ingredients they have are limited to that menu (except for some really nice Scotches). If you ask for something that's not on their menu, they will almost always request that you go to another bar for that drink. I've seen people over the years get extremely loud and upset at this, but that's how that bar has always been.

They can make about anything they have the ingredients for, but (as you point out) they only carry limited things.  They are sponsord by or affiliated with Diageo and only carry liquors from the Diageo family.

 

It is something to behold when someone gets all fussy because WCB doesn't have a blender or Tito's or a beer or some other such thing.

That's not been the case for a year now. Starting last September when the new WCB menus came out they have been a lot more flexible. The back page of the menu now lists beers and wines and they will make simple drinks.

I see a few beers and a few wines on the menu you linked to. Glad they’ve added some of those. Can you point to where they will now make simple drinks, as I did not see that on a menu.
