During the day, Safari Club (/LIbrary/CongoBar). Might be different in the Caribbean, but on the Arctic Circle, Iceland/Ireland, there was almost never anything going on in there during the day.

Def back in the Safari club. We did Caribbean on Jewel last year and other than setting up for the art auction some days, it's usually pretty empty. There are also seats all around the Centrum.  Also, the Viking Crown (Vortex) is where we go sometimes.  Schooner bar is usually quiet during the day.  We're back on Jewel in three weeks and expect it to be too cold to sit outside and read (which we prefer) so we usually sit in the VCL or DL.  As long as we don't get a guy like we had on EN in April who watched videos on his phone without ear buds.

There are lots of reviews out there.

Deck 12 port aft, there is a little alcove with a few wooden deck chairs, shady and you can sit facing the ocean. Promenade deck 5 is also a quiet place to relax and read.

I was on this cruise too and went there, in the Safari Club to do some reading on my phone as it was good reception back there too.
