My question is ..if you are dining in Britannia Club or one of the Grilles are there larger tables to be seated at as a solo or are you seated at one by yourself . I know Britannia has larger available tables. Thank You for your patience.

There are some larger tables available at least in Britannia Club and Princess Grills. You can request to be seated at one. However, remember, since this is anytime dining, others seated at the table may or may not be present when you are. Most table for 2 are close to other tables so you can be in conversation with other diners.

Because of the pricing structure you may find less solos available in Grills or B C to share. And as other posters have said even on a sharing table your companions may all dine at different times. There would be more opportunities to share with other solos in Britannia MDR

Broadly speaking you should get what you want as a solo, table for 2 or table for 6 or 8. Tables for 4 would be unlikely due to families wanting them.

There are some nuances on this depending on the details. For example if Britannia has a lot of family and groups on board (school holidays for example, or post Prom older teenagers) then the there's quite a lot of demand for the larger tables, particularly at the 2 fixed dining timings. On other sailings the front desk may be struggling to get the table into use at any time. The majority of seats are in tables of 2. That's also true of the Grills, but it's much less likely there will be a big family group.

For example on QV in Princess there is only one table for 8, which has the best maritime view, and 2 tables for 6 with good views too, facing towards bow and stern. So solos may well be put on those 3 tables. If as a solo in Princess you wanted a table for 2 the chances are you would get it, but it could be away from the windows unless arriving late.On the other hand if that particular sailing had a lot of solos then other outcomes are possible (and they change the tables around).

I do concur,

if you book a Britannia Cabin you can choose to be on the same table (on early or late dinner sitting) then your Maitre'D will sit you on a table with others (you can go for a table of 4, 6 or 8).

You can always change if you feel you do not gel with your table-mates.

Upon embarkation day the Maitre 'D is always on duty at the MDR podium until 3pm to assist with dining enquiries.

In QG. the table layout is fluid and based purely  on passenger requirements.

For instance there might be three large tables, or one or two if the need is there, I have no reason to doubt PG would be different.

On QM2, is it possible to eat every meal at a buffet?

Yes if you wanted to, there would be nothing stopping you. It’s your choice entirely. Dress code is not so formal so that is an attraction for many.
