Lunch Menus?

I have been reading the dinner menus and I think I'm gaining weight just looking at them! I was wondering, though, if anyone had the lunch menus for the dining room? Even if you do not have the specific menus, but have eaten there and recall some of the menu choices, I would love to hear them!

:) I have lunch every day in the dining room (actually, all three meals). I have a menu, but would have to type it out. If nobody posts one by this evening, I'll do that for you.

 

They have appetizers, soups, salads, good variety of entrees, and desserts. And of course, espresso and cappuccino!

 

One of my favorites for lunch is the Mongolian Steak Salad. Oh, so good. The Hay & Straw is as good as I've had anywhere - even my own kitchen!

 

They also have a fish entree and a pasta entree every day, along with babyback ribs, fajitas, huge burgers, fish 'n chips, chicken, chef's salad, etc.

 

I think the desserts at lunch are usually better than at dinner. The French pastries are wonderful.:)

Does the menu by any chance have a chicken dish that is a breast of chicken with spinach and riccotta? I'd love to know the name of it if it does! THANKS!

ohmygosh! Everything sounds so yummy so far! i'm thinking instead of the customary pound a day gain, for me it'll be 2 a day! by the way, anyone here go on a diet before their cruise to lose a few extra pounds UNDER their idel wight so that they can gorge without feeling guilty?

Liz - The only entree on there with spinach and ricotta is ravioli. However all I have is days 1-4, and I don't know if they rotate only these four days, or if I lost some pages...:rolleyes:

My girls (20 & 21) insisted on lunch in the dining room (in addition to dinner in the dining room) on our recent trip. It was a very nice atmosphere and we met some really nice people.

 

We never ate at the buffet, but did avail ourselves of some tasty sandwiches one night late.

 

It brought our dining experience to a "hole nubber lebel"!

I usually try to eat in the dining room whenever possible. I like being served, sitting down and using decent plates and utensils, and chatting with new people ... and oh yeah ... not eating buffet food (which is fine, but never what I would call an exquisite dining experience).

I'm doing it right now! Knowing I have a little extra buffer (5-7 pounds under the weight that I'm usually happy with) makes me feel less guilty about enjoying the food on the cruise. And it makes stepping on the scale after the cruise a little less depressing! :)

I'd like to know this, too :p

 

Also, what are the seating arrangements during Breakfast and Lunch... are they the same as Dinner?

 

Does anyone know which restaurants are open for Breakfast and Lunch on the Valor? Is there a different ambiance in the two dining rooms?

I found it on the dinner menu! I know I have looked at those a THOUSAND times! But this time I found it! It's called Supreme of Chicken Canival Style. Now if someone has the recipe, I'd be set!

Lunch in the dining room is not your standard seating arrangement. They filled the tables as people arrived.

 

The first day we sat with a nice family with two young daughters. The second day we sat with two sisters, and two couples.

 

The third day we were off ship at lunch time.

 

Day four we were back in the dining room with a table to ourselves!

Hay and Straw (not sure if this is the same or not): "Straw and hay refers to the combination of egg pasta and spinach pasta that are used."

Breakfast and lunch in the dining room is handled a bit differently than at dinner. You are escorted to an open seat where you'll dine with other passengers (I guess you could request a private table, but we never have). Only one of the dining rooms will be open, and on the last set of Capers I saw for the Valor it was the Washington DR.

Actually, when I make it, I think it looks much more appetizing!:D When I was working as a chef, it was one of the more requested entrees; however, on our menu I called it "Straw and Hay".

 

Some recipes use thinly sliced ham or Canadian bacon, but I always used proscuitto. The dish is very much like Fettucini Alfredo, but with a twist.

I make something very similiar. I call it

 

Breast of Chicken Florentine

 

2 large boneless chicken breasts

2 tbsp. butter

1/4 cup onion, finely chopped

1 cup cooked and well-drained frozen spinach

1/2 cup Ricotta

dash of garlic powder

 

Lay chicken breasts flat on a board, and pound with mallet until thin. Sprinkle w/small amount of salt and dash of cayenne pepper.

 

In skillet, saute onion in butter till onions are transparent. Mix w/spinach, Ricotta, and garlic powder. Spread mixture onto the chicken breasts, and roll up, securing w/toothpick.

 

Place in a foil-lined baking dish. Cover w/foil and bake in preheated 350 degree oven for 30 minutes. Remove foil from top and bake an add'l five minutes to slightly brown.

 

To serve, slice into 1/4" medallions. Serve over rice pilaf or wild & white rice.

 

I sometimes make a very thin white sauce, adding a bit of white wine, for a nice glaze over all just before serving.

 

This recipe won me $2,500 in a local chef's contest in New Orleans.:) :)

Isn't lunch only served in the dining room on at sea days? Port days the dining room is closed for lunch from what I remember from last year. I had the spaghetti the one day we ate lunch in the dining room and it was excellent.
