Anyone have the apple vychissoise recipe ?

Sailed on Zuiderdam last year and I can not get the dining rooms apple vychissoise out of my mind. If anyone has this recipe from thier cookbook I would really really appreciate it.

Checking on Amazon.com, The Taste of Excellence cookbook will be coming out on Sept. 5/06, but copies can be purchased in advance for shipment in September. The website giving news on the actual Carnival stock (globeinvestor.com) says that the book will be available on all the HAL cruise ships at $29.95 US. Some of the recipes include:

Dungeness Crab Cakes with Lime Ginger Sauce, Dutch Apple Pancakes with Maple-Flavored Honey, & White Chocolate Toque filled with Silky Bittersweet Chocolate Mousse.
