Specialty Restaurants - Solo Reservations Allowed?

I wondered if cruise lines with specialty restaurants accepted solo reservations, or is two the minimum requirement? If the latter is true, would the maitre'd try to pair up two solo cruisers? Has anyone had any experience with this one way or the other?

Solo reservations haven't been a problem for me on NCL. On my last cruise I had dinner in the specialty restaurant every night, save two. One of the two nights I didn't dine there was because I was bumped--the place was packed and they told me the day before, so it wasn't a big deal.
