runner15km Posted March 31, 2007 #2 Share Posted March 31, 2007 I like the Blue Mountain Coffee rum cake. There is a little store right across the street from the tender docks where you can sample the cakes and rum.:D

charlsee Posted March 31, 2007 #4 Share Posted March 31, 2007 Agree - coffee rum cake is deeelish! I would also like to know which brand is the best. Opinions, please?
janabug Posted March 31, 2007 #5 Share Posted March 31, 2007 Tortuga IMHO I'm addicted to them, we bought a mixed box with a lot of the flavors. Bananna is my favorite!
lorilea Posted April 1, 2007 #6 Share Posted April 1, 2007 We bought the Tortuga 6 pack of minis and I tried all 6 flavours. My favourite was the original. Having said that, upon our return from our trip my MIL had a homemade rum cake waiting at our house for us to eat! It's the best!!!
long4disney Posted April 2, 2007 #7 Share Posted April 2, 2007 We love the tortuga brand, and the key lime flavor. It was amazing, and so moist!!!
DevilMike Posted April 7, 2007 #8 Share Posted April 7, 2007 I second the other person - Tortuga's Blue Mountain. Blue Mountain has such a distinctive taste, and it comes across in the cake too, not like some flavors get cooked away.
Jan_In_Maine Posted April 7, 2007 #9 Share Posted April 7, 2007 I like Blackbeards best (which seemed to have a little less rum flavor than Tortuga did) - banana was my favorite. Picked up a few rum cakes (small one's) when we were in Nassau on our last cruise - brought them home - and unfortunately my dog found them - and ate one of them. I have a KILLER recipe for them. :D
HERKIMER417 Posted April 10, 2007 #11 Share Posted April 10, 2007 I purchased a sample of 6 small ones. Each is better then the last. I picked them up at the "factory" and was somewhat disappointed because the ship price ( Carnaval Miracle) was only $1.50 more and there was no factory - only a retail outlet. MamaParrotHead Posted April 11, 2007 #13 Share Posted April 11, 2007 Although I've never tasted an authentic rum cake, this is AWESOME. ALMOST TORTUGA RUM CAKE Cake 1 (18 ounce) box yellow cake mix 1 (3 3/4 ounce) box jello instant vanilla pudding 4 eggs 1/2 cup cold water 1/2 cup vegetable oil 1/2 cup Bacardi dark rum (80 proof) (flavored rums work REALLY well...coconut for the cake and pineapple for the glaze :D ) Glaze 1/2 cup butter 1/4 cup water 1 cup granulated sugar 1/2 cup Bacardi dark rum (80 proof) (see note above re: flavored rums) Cake: Preheat oven to 325 degrees. Grease and flour a 12 c. Bundt pan. Mix all cake ingredients together. Pour batter into prepared Bundt pan. Bake for 1 hour and cool completely. Make the glaze while cake is cooling. Glaze: Melt butter in sauce pan. Stir in water and sugar. Bring to a boil for 5 minutes stirring constantly. Remove from heat. Stir in the Rum. Invert the cake onto a serving plate or cake stand. Prick the top of the cake with a toothpick to allow the glaze to soak in. Drizzle and smooth the glaze evenly over the top and sides. Allow the cake to absorb the glaze. Repeat until all of the glaze is used up. (This will take several applications). The cake is really easy to make. The glazing takes a bit of time, but what I do is put the cake on a wire rack, and just place it on a plate. Pour the glaze over top, pick up cake on rack and place on another plate. Scrape off leftover glaze back into pan. Repeat. Switching back and forth between the 2 plates. That takes a bit, but it's WORTH it. And if you can make it a day or two ahead of time, the rum REALLY soaks in and it's AWESOME. I also toast a cup or two of chopped pecans and place them in the bottom of the bundt pan before pouring the batter over top.
Jan_In_Maine Posted April 11, 2007 #14 Share Posted April 11, 2007 WOW - thanks so much for the recipe - I'm always amazed what one learns on cruise critic! --- I'm going to have to make it myself. thanks again, Jan
lorilea Posted April 12, 2007 #15 Share Posted April 12, 2007 I'm going to have to try that recipe and compare it to my MIL's! Thanks!
Shiiilo Posted April 17, 2007 #16 Share Posted April 17, 2007 I purchased the Turugo 6 pack at a store close to Senor Frogs (deli market type place) for $20 american. We just ate the original one and it was awesome, perfect size for gifts!. My sister went to buy it on the ships duty free (RCCL) and it was more expensive but with my receipt they matched the price and we bought 2 more packs. Something to keep in mind if you miss getting it you can borrow the receipt of someone else and still get the good deal.
mom2NnB Posted April 17, 2007 #17 Share Posted April 17, 2007 Is the factory in walking distance to the pier for the Carnival Liberty? If so, how do I get there? Would love to get some rum and cake and if we can sample first, even better.
