adoptmom Posted November 6, 2004 #3 Share Posted November 6, 2004 I agree! soups are the way to go. Broccoli soup is very easy Nuke some broccoli in a bit of chicken broth until it's very tender then puree it in the blender with more chicken broth until it's thick and soupy. You could add a bit of milk if you want it really creamy. We top it with just a bit of really good cheese like parmesano reggiano or pecorino romano so we get lots of taste for very little cheese. This also works with cauliflower, asparagas, chard, collards, spinach, butternut squash... The possibilities are endless and easy. Cauliflower, spinach and squash are good with a pinch of nutmeg added. We also eat alot of tomato beanpot soup 1 can chickpeas drained 1 can of diced tomatos 1/2 cup chopped onion 1 cup diced celery 1 T cheap yellow mustard 1 T pickle relish 2 T brown sugar or for low carb 1 T molassas and 1 T splenda 1/4 C splenda (optional but good) 1 Cup water. I just toss this in the crockpot in the morning and let it go on low. It's supposed to serve 6 but I have to make a double recipe because my kids inhale it. We also make alot of chili with 2 or 3 kinds of beans. Sometimes I add ground turkey breast for ground "meatless" from morningstar farms if family is coming over but mostly we just eat bean chili. Another filling thing is hot tea. This time of year I drink chai with just a touch of milk. It's very filling and warms me up. Tami
