Sapphire / Mexican Riviera

We are on the Sapphire Mexican Riviera in October 2009.

 

For those of you who have been on this cruise, and ordered the Ultimate Balcony Dinner, which night would you suggest to book the dinner to take advantage of the sunset? I imagine the first sea day out of LA and the sea day before coming back to LA are the two formal evenings, so they would not be good nights.

 

Has anyone on that particular itinerary done the Chef's Table dinner, and what night was that dinner held on?
