I am on a low sodium diet and the Assistant Manager (in the MDR) checks with me every night.  Services differ per individual.

One time, I had this terrific person who would suggest and then "create" meals for me.

The important thing is to speak with the head waiter (or whatever Princess is calling them today) in the MDR. They are trained to handle dietary restrictions - waiters are not. The head waiter will see you each day at dinner and take your order for then next day's dinner and for lunch if it's a sea day. With the one day notice, they can modify a lot of foods to be low sodium.

As NavyVeteran said, just speak to the head waiter.  If eating lunch in the dining room, request to see the lunch menu the night before too.

cr8tiv1 has it right too.  Some are much more helpful than others.

You just need to talk with the head waiter onboard - you don't need the maître d'. He will take your order each evening for the next day.

As stated above, just speak with the Head Waiter.  They will take your order the night before.  You can also request the lunch menu for sea days in the dining room.  Some are more helpful than others, and give more guidance.

I just booked a flight on EZ air and even though it says payment due at final payment they went ahead and charged my credit card on the spot.

Was this a casino booking?  Those have to be paid at time of booking.

So does Emerald Princess have diet tonic water at their bars.

They had it last November at Skywalkers.  I've found diet tonic on most Princess ships.  But, it's usually only at one bar.  It's up to you to find that bar.  If you do find it, and it's not your favorite bar, just tell your favorite bartender, and they will probably have it the next day.

I usually bring a liter or two on with me, just in case.

Restaurant manager will do his best and at least get you in same section of your preferred servers.

This has been true on 11 of the last dozen cruises we have taken.  On the Sky last March we had a Head Waiter didn't do his best.  Example, one night we showed up and were told it would be a 45-minute wait for our table.  We decided to be seated elsewhere.  Fifteen minutes later, our waiter walked by and asked why we weren't at our regular table.  The guy where we were seated thought that he was done for the night, and now he has a party of eight to serve.  It was the worst service we've ever had on over 400 days of sailing Princess.

they probably rotate which ones they use so luck of draw.

Somewhat, but probably not too much.  Example, Emerald Princess has 11 lifeboats on the starboard side, but only three of them are set up for tendering.  For the most part they only use the double deckers to tender.

This is on a lifeboat from Celebrity Beyond.  I would rather tender than use it as a lifeboat.  OPPS!
