No rush at all and IIRC there are only two which you book - White Room and East. No need to book for Ramblas, just turn up (but don't go for an evening meal, they are only tapas so you may not be full - TBH we thought it was poor in terms of choice).

 

You can book as soon as you board as the restaurant managers will be in the atrium taking bookings. They will also tell you when the formal nights are etc so you can pick and chose the nights you go.

We booked quite close to the entrance on deck 5, when we embarked, which is good because the time before on Ventura, we had to treck right up to White's.

We had much more than tapas at Ramblas....we had a choice of tapas to start with, then each chose a paella. The smoked meat one is excellent...OH had the fish, and went back for it another day. We didn't opt for a sweet, but had an enormous meal there. The house wine is cheaper there than the rest of the ship.
