Each cruise line may do things a bit different. We have been on a Princess cruise that was a sea day. The pool area, each bar and the atruim were all decorated with a count down at midnight. If you are on a 14 day or more cruise the average age of the passengers will be higher and it may get quite soon after midnight. There is a good chance the dinner will be a formal night.

We have done two cruises during NYE on Princess. Last time was in December/January and even though it was a two-week cruise, and with several elderly onboard, I would say the Piazza was packed at midnight.

 

There was a countdown on a big screen tv (they were using the Fox feed) while one of the house musical groups performed. At midnight there was a balloon drop. NYE's dinner was formal.

On an NCL NYE cruise out out of NYC everyone was dressed to the nines. They had different kinds of parties in different areas of the ship. We opted for the deck party but there was an MTV style event in the disco & a Guy Lombardo style in the main atrium by the piano bar. They drained a hot tub & filled it with bottles of champagne for sale.
