A Napoleon is composed of layers of some type of cream filling separated by layers of pastry. Another name is Mille-Feuille. Traditionally the pastry is sheets of a delicate puff pastry separated by pastry "cream" (a light custard). See here. Today it is common to see the term Napoleon applied to any dish that is composed of layers of one or more fillings separated by some type of separator.
