They are usually the 2nd night and 2nd to the last night but without knowing your itinerary, can't really tell for sure.

Since it is for Formal Night, I certainly hope those are French Oak Barrels, and not some commoner American White Oak, or even worse, that Italian Salvonian Oak!! (Yup, he's been sneaking over to Wikipedia while sipping the grape!).
