Is it acceptable to wear a tie ( no jacket) to Chops and formal night on a Spring Freedom of the Seas cruise?

Chops is "smart casual" even on formal nights. Having no jacket will not get you turned away from the MDR.

Actually, a tie without a jacket looks kind of dumb, so might as well ditch that also.

They (ship restaurants) won't let you in wearing shorts. Applebee's is a poor example.

Apparently you have never worked in a warm climate. I was in outside sales, for 35 years in South Florida, a short sleeve dress shirt with a tie was the norm.

I live in Florida too. I know all about warm weather climates. I've been in a tux at an outdoor June wedding.

 

I also worked as a self-employed computer tech for a decade. Those that were non-self employed in that field were forced to wear ties with short sleeved dress shirts (think Geek Squad). It looks dumb, and I have trouble taking it seriously.

You certainly can wear a tie but I suggest you consider pants and a shirt as well. (Like Foghorn Leghorn used to say," That's a joke son.")
