Has anyone else known the decline of the fish quality? We are finding the fish not as well cleaned as in the past, still some silver skin. And I really question whether it is cod.

Could be Coley which is widely used in UK Fish and Chip Shops. A lot cheaper than Cod or Haddock.

If it is coley the flesh will be a bit greyer than cod or haddock - some UK chippies are also using gurnard instead of cod which is an excellent substitute.

...and Whiting, too.

 

Whiting and cod are really different. Cod is thicker and less flavorful than cod. Whiting is in the trout family, thiner and flaky. Cod is a thick fleshy fish. I eat cod, but fried whiting is a favorite.
