You would be best to post this on your roll call. If I knew the date you are sailing I could give you a link to it if one has been started. There, you can join up with others who are doing private excursions. They are usually cheaper and better than the ones the ship offers.

...book Tuscan Grill first night. MDR is always really busy first night so it makes even more sense. You have great views at the back of the ship as you sail away.

We did that route last Nov 2014, great cruise. Back on for the 10 day this Nov.

 

Exactly what type information are you wanting? Just about shore excursions? What do you like to do and experience?

History, snorkel, shopping, dinning? This will help get you clearer answers.

As mentioned the Port of Call board is a wealth of info, along with the Roll Call.
