As for excursions in the ports:

Grand Turk--A great place to spend a day on the beach. Just grab some of the free loungers with umbrellas.

Half Moon Cay--Another great day on the beach. You might want to consider getting a cabana.

Freeport--Stay on the ship. There's nothing to do here with a one-year-old.

Learn the time the childcare is open for under 2 babysitting. It is 6.75 per hour plus 15% gratuity. Use it and get yourself some relax time. We found Carnival's staff excellent with children. The reviews were overwhelmingly great and was the primary reason we started with Carnival and stayed as the kids grew older.

Bring plenty of diapers and supplies as there are none for sell on board. Use the washers/dryers when necessary. Bring your own detergent.

We cruised with our daughter at 10 months and 13 months, we had 2 great trips. We took a small umbrella stroller and moved around a lot! 3-4 crew members took special interest in her and always came over to talk to her. The kids camp offers 2 hours of free play for you and your little one on sea day mornings, we enjoyed this every sea day. Our night life consisted of being n our cabin by 8:30 each evening.

Definitely umbrella stroller- slide under the bed when not in use. We also brought a small float for our daughter to use while we were at the beach. Also brought beach toys. We took advantage of the babysitting hours during sea days so that we could enjoy the pool and hot tub. She also went to babysitting at one of our ports, so that we could go snorkeling. The staff at Camp Carnival/Ocean are awesome!

When we took our son (1 yr. old) awhile back, they would not change diapers, they call you to do it. And this is only on ships that have pd. baby sitting at night. They would not take him at all during the day because of diapers. You will have to see when you get on the ship because each ship is different. What we were told before we boarded was not the case when we got on. We only got about 2 hours at night and not every night. Take a baby sitter if you can.
