If you need a resort I would also suggest checking into a day pass to one of the hotels.

 

Otherwise, Money Bar, Sky Reef, Palancar, Paradise Beach, are all open as far as I know, all have websites but extra activities may/may not be available, you would need to check by email.

 

Not sure if the east side bars are all open on a Sunday but Chen Rio is certainly popular with locals. Local people consider Sunday’s a family day and many take picnics to the beach. You could use the opportunity to book a tour with a private driver, (we use ToursPlaza and they would advise you as to what is open) and fill a cool box, take a tour and finish off at one of the southern beach bars? Also festivities at the town square.
