Timing might be slightly different, but it's usually a 3.5 hour period in the evening.

It seems to be the rule of thumb that if late seating is at 8:30pm, 3 drinks on seapass good during the period 5 to 8:30pm.

If late seating is at 8:00pm, 3 drinks on seapass good during period 4:30-8:00pm.

To clarify you don't get vouchers for any D,D+ benefits now they are automatically put on your Seapass card.
