If you show up prior to that selected time, you may be waiting outside in the sunshine, or the rain. We try to show up just AFTER our selected check-in time, then proceed right inside the terminal. Proceed thru Check-in, then wait inside until called to board the boat. Most cabins are ready about 1:30-ish. If you time it right, you can go directly to your cabin. When I checked on the 90th day prior to sailing, I was not given the option to select an arrival time. It was already posted on my Boarding Pass. It was 11:30 - 12:00. You are going on after weddings diamonds, platinum's and disabled. Go early and get on early. Weddings, Diamond, Platinum, and suite guests. Not sure how accurate the "disabled" part is.
