Just booked the Empress of the Sea's cabin 8680 any thought on this cabin.

Seems like it's just a regular 2N OV cabin. You can read through some Empress threads here: https://boards.cruisecritic.com/search/royal-caribbean/empress and see if anyone has anything to say about any 2N cabin. Not sure what you are looking for specifically.

Try YouTube, Trip Advisor, etc. I watched a few Empress cabin videos on YouTube to help me choose one.

Expect a small cabin.

Here's 8170. Unobstructed window view, but seals were broken making the window cloudy.

Tiny room, no fridge, no leisure seating. After the photo, I had the beds split to make a couch of sorts. 

 

Paper thin walls, so hope you have quiet neighbors, bring earplugs, and be mindful that any conversation can be clearly heard next door. 

 

You've been given good advice - YouTube is now my go-to site when researching cabins. You usually have to mute annoying commentary (yes, I can see that this is the cabin bathroom...) but there is a lot there.
