Will I be able to make reservations online for all the dining venues for 8 people?

If you book at the stroke of midnight NCL-time 120 days out. Otherwise, you’ll have to do it on embarkation day.

Most likely you can. If you can't do it online a quick call will take care of it. The wait times for reservations are rarely more than 5 minutes.

That very much depends on what time you want but 8 is definitely an option.  Also, don't get too upset if you can't book online - that's only a portion of the available reservations so be sure to make it a priority on embarkation day.
