Hmm,  cruising Oz and NZ and after water / beach activities, not sure how that will pan out for you.  😉  At least in WA, when you visit Perth you could come down to Mandurah for the day = https://www.visitmandurah.com/adventure-and-sports/beach-and-water-activities.

I did a circumnavigation of NZ South Island this year and found that the excursions involving going out onto the water in smaller vessels (than your cruise ship) nature-spotting were really wonderful. I would look for those via your cruise ship or independently if you prefer.
