Oceania does try to get the classes organized by at least 4 months out, but they are recruiting from a limited pool of staff who are concurrently working full time jobs elsewhere on the ship. Some of those were both onshore and back at the ship kitchen, some were all onshore. Both were great!!! The plain cooking class ones only onboard were less interesting to us.
