I would think they’d station servers at first and stop all self-service.  If buffets are totally gone then a redesign will probably happen down the line.

There are all sorts of options, I imagine. For example, they could still use the space, but just have servers assist with the selection of items and limit the number of passengers in the space at any one time, while also requiring all passengers to enter through the same entry door.

Isn't it quite possible that there will be a vaccine or reliable tests or fine therapy, etc., and things will return more or less to "normal" in 18-24 months?  After all, we have been living with the seasonal flu forever.  I think it would unfortunate for Silversea to take hasty and drastic action, as for example having no buffet at all on Dawn.  In the short term, there are surely workarounds.
