We've booked the Oct '2022 Odyssey Transatlantic from Rome to Ft Lauderdale.  We are planning on getting to Rome 3 days before the cruise.  I'm assuming we will still need to provide Covid test 2 days before we board.  How do you get testing in Rome?  Can you do the proxied Home test from Europe, or is that a US process?  Thanks for any info on this subject.

It's way too early to know what the requirements will be at the time of your cruise. Check the requirements on Royal's website just prior to your final payment date.

I have read on a couple of the points websites that the reporters in question took the US tests with them and used them before returning.

Failing that there will certainly be places you can get tested in Rome at a cost. You should be able to find them by doing a google search.
