Can anyone give us some advice on doing something for 1 day prior to our Carnival cruise.  We will be staying at the renaissance hotel at the airport. We are open to tours fro there for 1 day then we will probably just catch the carnival bus from heathrow.

thanks in advance

Getting into Central London as the title asks is very easy, your hotel is very close to the Underground (Metro) so if you are happy with pubic transport this is the quickest, most efficient and lowest cost option.
for things to do, there are millions of things to do in London from sightseeing (London Eye, big Ben, houses parliament, Buckingham palace, The Shard, The Tower, Tower Bridge etc etc) if you want culture there is the West End for shows or catch a Opera plus no end of museums that are nearly all free to enter.
Without knowing what you like it's impossible to cover everything that can be done in London.

In a day you can do 1 or 2 things very well, or cover a lot of ground just sightseeing.

My advice is plan, plan and plan.  Look at the many websites which will give you an idea of what there is and where it is and how you can maximise a one day visit.

Once you have planned come back here and I'm sure people will give advice on whether it is possible.

The Thames Clipper river boats are an excellent way of seeing the city from a different angle.

The "hop on, hop off" bus tour could be a good way of cramming a lot of sight seeing round the capital's central touristy area, into one day. It will be superficial, of course. If you have particular interests, doing just a couple of things in the day may be a good alternative.

(PS: long time since we were in Myrtle Beach. Had a really relaxing few days there)
