Boarding yesterday wasn’t too bad, although the terminal was very crowded with two huge Celebrity ships also boarding. Dinner at Earth & Ocean last night was delicious. Service was excellent. Breakfast at the Collanade this morning. Service was a little spotty (waiter delivered DHs tea to the wrong table and almost did the same with his eggs Benedict). SDuckers Posted September 18, 2022 Author #4 Share Posted September 18, 2022 Sea day yesterday, and really lucky with the weather. Other than an hour or two of fog, it was mostly sunny and clear. Team trivia had a big crowd turn out. Jan (CD) is quite fun. Formal night in the Restaurant. Service was spotty at times, but the food was delicious. I had the goat cheese soufflé and beef Wellington. DH had the consommé and duck a L’Orange. We shared a side of truffle risotto. Given that it typically is very rainy here in September, it was a nice surprise. We went on the excursion to an oyster farm. The boat trip out there was lovely and seeing the process was very interesting. Then we got to eat freshly shucked oysters, raw and grilled. Trivia was well attended again, although a bit fewer people. Lots of fun. Dinner at TK Grill. It was ok, but some disappointment. The oxtail consommé with truffle was devoid of truffle flavor and really just tasted like a salty bouillon cube soup. The Caesar salad was excellent as was my veal chop. The side of Mac and cheese was just meh. I forgot to take pictures. Entertainment was a comedian. He wasn’t very good. Clear sunny skies and temps in the mid 60’s. In the afternoon lots of folks pool side and using the hot tub. Our excursion was a boat out to see sea otters and other wildlife. Saw bears catching salmon, a raft of sea otters, and many humpback whales. Really outstanding. Cocktail hour had caviar and music poolside as we sailed away. Dinner was Keller fried chicken night at the Colonnade. One of my favorites! As delicious as always. Today is Glacier Bay. It’s very foggy so far this morning. Laylam Posted September 21, 2022 #18 Share Posted September 21, 2022 Twice Baked Goat Cheese and Garlic Soufflé Serves 4 portions Ingredients: 1/2 oz butter 1/2 oz flour 2 each garlic clove, minced nutmeg 3,2 oz goat cheese 2 each egg white 1,5 each egg yolk 2,7 oz milk 1 oz grated parmesan 1/2 cup sour cream Preparation: Warm the milk with the garlic and a little nutmeg. Mix the butter with the flour and bind the milk to a sticky mass. Blend in the cheese. Remove from the heat and blend in the egg yolks. Season to taste. Whisk the egg whites with a little salt to help it stiffen. Slowly fold in the egg whites to the cheese mass. Fill into molds which have been brushed with butter and dusted with flour. Place in a water filled baking sheet. Bake firstly in a hot oven for 50 minutes at 250 F. Remove from the molds and place in individual serving shells. Pour sour cream around and grated parmesan on top of the soufflés. Morning had Zodiac excursions but canceled the kayak excursion due to fog. Weather was heavy overcast and rainy all day. I did the Zip Rider zip lining and it was exhilarating and amazing. I bet if it wasn’t raining it would be even better. The gondolas up the mountain are also awesome. Dinner in the restaurant. I had the prime rib and it was perfect. They even got horseradish for me! DH had the seafood soufflé, which he said was very good once he got it served hot. And periodically I get logged out for no apparent reason. Seabourn needs to get that fixed. So, to catch up on my reports, our stop in Haines/Skagway was wonderful. DH opted to do a “Tours by Locals” guide in lieu of a Seabourn excursion. I think he made the right choice, although the folks who did the train from Haines to Skagway seemed to enjoy it. That’s a full day jaunt (6 hours) and we didn’t want that. Our guide gave us a solid 4 hours and drove us to places bigger groups wouldn’t go. Dinner in the Restaurant . Service is good but the aggressive selling of premium wines gets a bit annoying. Sometimes the entrees aren’t as hot as they could be. IMG_0862.MOV Last night on the ship for those doing the 7 day cruise. I’m glad we get another week!
