Why does Guy’s P&A have table service for dinner? Could probably reduce the crew if staff served like lunch

a couple cruises ago we had the steakhouse booked for dinner.  we decided to switch to P&A a couple days beforehand - less $ but still a sitdown restaurant that was different from MDR.  less crowded.  

 

we found it good, not great.  but i dug the vibe.  and its the only place i've found Col EH Taylor bourbon at sea, which is a huge plus in my book!
