Are shops open early in port area on day that ships arrive at 7am?

I'm assuming we will be on ship's time/FL time during summer/daylight saving so we are one hour ahead of Grand Cayman. Our ship arrives 7am, 6am local time. Anything open yet? Any point in getting off early, if our tour doesn't start until 9am local time? What's open? I would love to eat before and after. Ship leaves at 4pm ship time (3pm local)

Not sure about stores, but many of the restaurants that serve breakfast will be open.

 

I’d try Waffle Monkey - https://wafflemonkey.net - they open at 7am, so will be likely open by the time you can get there.

 

Bread and Chocolate - http://www.cafe.ky - is good, but they don’t open until 8am.  
 

There’s a few other breakfast spots that might be open - https://www.caymangoodtaste.com/best-of-cayman/the-best-breakfast-spots-in-grand-cayman - look for ones in George Town and then look at the map to see how close to the port it is to see if it’s feasible.

You also need to consider how long it will take to get off the ship and into port, given it is a tender port.  It can take quite a while longer than a pier.  May go quick, but it may not.

 ship may leave at 4   but pay attention to the last tender time
