Island Princess--what is the difference in the dining rooms?

Trying to book dining reservations for our August cruise in the Island-P.  What is the difference between the Bordeux and the Provence dining rooms?

Location, slight decor.   Same menu, kitchens, service standard, etc..

on Island Princess now, Provence is more traditional with early and late seating.  Bordeux is Anytime.

but i found out that even though you make reservations, you font have a form reservation for Bordeaux.  we had reserved 2 six person tables for our group & when i went to check locations, the maitre'd recommended we switch to Provence since daughter needed gluten free & we could have same servers.  he said although we had a "reservation" for 6 pm there would be no way to get seated then for 2 tables of 6.  instead we're in Provence & show up around 5:45 & walk straight to our table & the waitstaff knows us.

BTW, food is just soso, & the so-called premium desserts are not edible (black forest or red velvet cake).
