Most reporting suggests the "norm" is that the offers are limited to two major cabin categories above your existing category and most wins are for one category above the booked one (except maybe Q class where inside to balcony seems somewhat common).
How long ago was this? For a while during the COVID restart Royal Up offers were like this, but I think they went back to the pre-COVID norms (of limiting offers to two major categories above booked category) for several months now.
You can cancel the second person but it won’t save anything but taxes on the second person. You can transfer a sailing to a TA within 30 days if it’s not paid off and before final payment. You can switch names on a booking up to about two days out (one of the original names has to stay).
Likely to have three, with the first one on night two, the second one about halfway and the third on the next to last night - they may or may not be called that.
And some folks still got the extra points when they had a no show. The RCI IT system does sometimes makes mistakes in the customer's favor.
It could also be that when you cancelled the second person, the system somehow modified the booking to look like a solo booking to the C&A system that awards the points.
You don't get anything back other than taxes when you cancel the second person - you get 75% back if you cancel the entire booking (no one sails). What you can do to get the extra solo point is to modify the booking to a solo (canceling the second person doesn't turn the booking into a solo) - that may or may not be a deal at the time you do it.

The math used to be that the D+ discount used to cover (or close) the last three days of Surf. On ships where Surf is not available, that math will change a bit.
Newer ships have something closer to fridges in that they cool to a lower temperature, but very unlikely any ship had wholesale changes to the coolers - the older ships all had/have the "coolers".
